Decant was created from a deep love of food, wine, and hospitality, inspired by Jessica Cahill’s lifelong connection to each. Raised among the vineyards of Calistoga, California, and shaped by the culinary traditions of Florence, Italy, Jessica built her path as a Certified Sommelier through respected establishments in San Diego, Napa, and San Francisco. Her journey eventually led her to Medford, Oregon, where she found the perfect place to bring that experience, passion, and vision to life.

At Decant, that vision comes together in a dining experience centered on seasonal ingredients, organic produce, thoughtful cooking, and genuine hospitality. Every dish is meant to reflect a sense of place, and every glass is chosen to complement the moment.
Our Values
At Decant, we believe great food begins with great ingredients. Our approach is rooted in a clean, natural, and seasonal way of cooking, inspired by the old world tradition of enjoying local foods at their peak. We source many of our ingredients from local farmers and producers, with a strong emphasis on organic products and sustainability whenever possible. Through that commitment, we aim to showcase the richness of the Southern Oregon Valley and the extraordinary bounty available close to home.
